Raid Finder: effectively retard mode. 25 players. There as an intro to raiding and for people to see lore who are too bad to do the real raids--it is almost impossible to wipe. They're usually split into a few different bosses at a time, not the entire raid at once. Raid Finder usually unlocks after the raid has been released for around 2-4 weeks. Instead of building the raid, you just queue up for it using the Dungeon Finder. Usually a split of 2 tanks/5 healers/rest dps. Gear dropped is ilvl 835. (Heroic dungeons drop 825 gear).
Normal Mode: 10 to 30 players. Bosses have mechanics that can actually kill people, but average players should be able to tackle majority of the raid on its release. Drops ilvl 850 gear.
Heroic Mode: 10-30 players. A transition between Normal Mode and Mythic (hard mode). Bosses a little less unforgiving, but very few new added mechanics. ilvl 865 gear.
Mythic Mode: 20 players only. These are the old Heroic modes. It's only 20 players and no split raid sizes to make the fights easier to balance. New mechanics, unforgiving, the works. ilvl 880 gear.
Inbetween raids, there's also Mythic dungeons. Kinda the same idea: 5 mans with extra mechanics over the old heroic modes. They've also made a Diablo 3 greater-rift system for mythic dungeons called Mythic+, the higher the difficulty, the more hp/damage mobs get, and they can also get fun new mechanics like every trash mob enrages at 30% hp, or lava pillars randomly erupt under your feet. The gear scales based on the level of the mythic+
